Recipe: Healthy Chilli Pie
Including plenty of fruits and vegetables in your diet will not only make you feel your best, but it'll protect you from a number of diseases and help you maintain a healthy weight.
This delicious pie contains 1.5 serves of vegetables, it's quick and easy to prepare, which makes it perfect for a weeknight meal.
1 tbsp olive oil
1 onion, chopped
1 red capsicum, seeded and chopped
1 carrot, chopped
1 zucchini, chopped
1 garlic clove, crushed
500 g beef mince
1 tbsp cumin
1 tbsp ground coriander
1 tbsp chilli powder
1 tsp cayenne pepper (more if desired)
400 g tin diced tomatoes
1/2 cup red wine
1/2 cup water
400 g tin 4 bean mix, rinsed and drained
1 cup grated parmesan
4 sheets filo pastry, quartered
Pre-heat oven to 200*C
In a large saucepan, heat the oil and saute the onion, capsicum, zucchini, carrot and garlic for 3-4 minutes or until the onion in tender. Add mince and cook until browned (4-5 minutes), breaking up any lumps. Stir in all spices and cook for 1 minute.
Stir tomatoes, wine and water into the mince mixture and bring to the boil. Reduce heat to low and simmer for 15 minutes. Stir in beans and season with salt and pepper.
Grease an oven proof dish and spoon in mixture. Sprinkle evenly with cheese. Spray filo pieces with oil, then scrunch and cover the filling.
Bake 10-15 minutes until the pastry is golden brown. Serve pie with a side of leafy green salad and enjoy!
