Recipe: Seafood Paella


A perfect meal when you have limited preparation time. Taking only thirty minutes to cook will leave you more time for the more important things.

Ingredients (Serves 2)

2 tsp olive oil

1/2 red capsicum, finely chopped

1 brown onion, finely chopped

1 garlic clove, finely chopped

2 tsp smoked paprika

100g arborio rice

400g tin crushed tomatoes

1 1/2 cups chicken stock

200g seafood marinara mix

1/4 cup green beans

1 lemon

1 frsh chilli, finely chopped

2 tblsp fresh parsley

Method

Heat oil in a large pan over medium heat and saute onion, garlic and capsicum for 5 minutes.

Add rice and paprika and cook for a few more minutes.

Add tomatoes, stock and cook for about 15 minutes, or until all the liquid has been absorbed and rice is tender.

Add seafood and beans and cook for a few minutes or until seafood is cooked.

Serve in bowls, with a squeeze of lemon and parsley. Enjoy! Contains 33g protein, 51.2g carbs, 10.4g fat (2.9g sat fat) and 7.7g fibre per serve
