Recipe: Healthy Curried Red Lentil Soup


Curried Red Lentil Soup

This is one of my favourite soups, the delicious curry smell wafts throughout the whole house when its cooking, its healthy and nice and warming on a cold winters day.

This healthy soup contains two out of the five serves of vegetables as recommended you eat a day. It also contains approximately 30 grams of protein, 50 grams of carbohydrates, 12 grams of total fat and 22.5 grams of fibre.

Makes 2 serves.

Ingredients

1 tbsp coconut oil

1 small brown onion, finely chopped

2 cloves garlic, crushed

1 stalk celery, finely chopped

1 medium carrot, finely chopped

1/2 medium capsicum, finely chopped

1 tbsp mild curry powder

2 medium tomatoes, finely chopped

1 cup dried red lentils, rinsed and drained

3 cups of water

1 tbsp tamari (or soy sauce)

1 red chilli, finely chopped (optional)

2 medium kale leaves, trimmed and shredded

1 tbsp lime juice

1/4 cup parsley leaves, coarsely chopped

Method

Heat oil in a medium saucepan, add onion and garlic and cook until they softens. Add carrot,celery and capsicum, cook for 2 minutes, or until it all softens. Add curry powder and cook for 1 minute.

Add tomatoes, lentils, water, chilli and tamari and bring to the boil.

Reduce the heat and simmer covered for 10 minutes, or until lentils are tender.

Stir in kale and lime juice, then serve into bowls, and garnish with the parsley.
